2 cups all-purpose flour
2 cups sugar
1 1/2 cups oil
4 eggs
2 tsp. baking soda
2 tsp. salt
2 tsp. cinnamon
1 lb grated carrots
1 cup chopped pecans
Mix sugar, eggs, and oil and beat well. Add flour and other dry ingredients. Stir in carrots and nuts. Bake in 3 greased and floured 8" cake pans in a 350 degree oven for about 40-45 minutes. Cool well before icing.
Icing
1- 8 oz. package cream cheese
1/2 stick margarine
1 box confectionery sugar
2 tsp. vanilla
Mix well and spread on cake.
This icing is good on any kind of chocolate cake.
