Red Velvet Cake

1/2 cup + 2 Tbs. butter
1 1/2 cups sugar
2 eggs
1 oz. red food coloring
1 tsp. baking soda
1 Tbs. vinegar
2 Tbs. cocoa
1 tsp. salt
1 cup + 2 Tbs. buttermilk
2 1/4 cups flour
1/2 tsp. baking powder
1 tsp. vanilla

Cream the butter and sugar.  Add the eggs, one at a time.  Add the food coloring, cocoa, and vanilla.  Beat well.  Add salt, baking powder, and flour alternately with the buttermilk.

Put soda in the vinegar.  Sprinkle over the batter.  Fold (do not beat) until blended.

Bake in 3 - 8" greased and floured cake pans at 350 degrees for 25 minutes.

Icing
1 stick margarine
8 oz. cream cheese
1 box confectionery sugar
1 tsp. vanilla
1 cup nuts, chopped

Mix and spread on cooled cake.
