1 cup sugar
4 Tbs. cornstarch
4 Tbs. strawberry Jello
1 cup water
1 pint strawberries
1 graham cracker crust
Mix sugar, cornstarch, jello, and water in a heavy saucepan and cook until thick. Cool.
(Note: Mom says to make this with sugar-free jello, you should boil the sugar, cornstarch and water until thick. Remove from the heat and beat in a small package (all or part?) of sugar-free jello. Cool. The pie is more creamy when using the sugar-free.)
While the jello mixture is cooling, slice a pint of strawberries and place in the pie crust. Pour the cooled mixture over the strawberries and refrigerate.
Serve with Cool Whip.
The first time I made this recipe for my husband, I used way too much jello and cornstarch. The pie was rather rubbery, and my husband has referred to it is "Gummy Pie" ever since.
